Can you use a probe thermometer while cooking on a pan?

I've always wondered this question, I have an oven meat-thermometer with a probe that you can safely leave inside the oven. Can you put this in meat for when you pan-sear and/or pan-cook meat as well? I figure, if it can survive a roast in the oven...why can't it do it on top of a pan?
